Roasted Sesame Ginger Chicken and Vegetables

This one pan roasted sesame ginger chicken meal has quickly become one of my family’s favorite weeknight dinners.  It uses a delicious chicken marinade and is loaded with vegetables that are coated in a toasted sesame oil dressing prior to roasting.  The first time I made this one pan dinner, my oldest son said that the bok choy reminded him of kale chips.  In our house, that is a huge complement. (By the way, if you have picky eaters who don’t love green leafy veggies… try kale chips!)

Easy Weeknight Dinner: Roasted Sheet Pan Meals

More often than not, the before-dinner hour is hectic and involves my little sous chef trying to help with dinner.  So I am always looking for nutritious and delicious dinners that cook quickly and are easy to assemble.  Fast clean up is also a must!  Roasted sheet pan meals meet all these requirements and are my go-to for busy weeknight dinners.  Sheet pan meals also happen to be the theme for this month’s Recipe Redux: We love throwing ingredients together on a sheet pan and roasting for a simple sheet pan dinner. They make busy weeknights a bit more manageable. (And clean-up isn’t bad either!)

One Pan Roasted Sesame Ginger Chicken with Vegetables

I typically serve this roasted sesame ginger chicken and veggies with quinoa or brown rice. The recipe serves our small family of 4 for dinner.  I have been known to double the recipe (two roasting pans worth) for nights when the boys are particularly hungry or when we want leftovers for lunch later in the week.

Savory and slightly sweet, this gluten free roasted sesame ginger chicken is a delicious and healthy weeknight meal your whole family will love.

  • 6 sesame ginger marinaded chicken thighs * (~1.5 lbs)
  • 4 baby bok choy
  • 4 carrots (washed and peeled)
  • 3 T toasted sesame oil
  • 1 T low sodium tamari (low sodium soy sauce can also be used, but is not gluten free)
  • 1/2 inch fresh ginger (peeled and grated)
  • 1/2 red bell pepper * (washed and diced)
  • 1/2 bunch green onions (washed and diced)
  • 1 T toasted sesame seeds
  1. Preheat oven to 400 degrees F

  2. Trim bok choy bottoms, cut in half, and wash thoroughly under running water to remove any dirt between the leaves. Dry bok choy completely.  I use a salad spinner

  3. Cut peeled carrots into 2 inch pieces on diagonal. Then cut in half lengthwise
  4. In a small bowl, combine toasted sesame oil, grated ginger, and low sodium tamari. Mix to combine
  5. Place carrots and bok choy halves on roasting pan. Add sesame oil mixture and coat evenly
  6. Remove chicken from marinade and place on top of carrots or sheet pan, not on bok choy
  7. Sprinkle diced red bell pepper evenly over veggies and chicken
  8. Roast in 400 degrees F oven for 30 minutes, until chicken is cooked through, leaves of bok choy are crispy, and carrots are tender

  9. Remove from oven and sprinkle with green onions and sesame seeds
  10. Transfer chicken and veggies to a serving dish and liquid from roasting pan into a gravy boat
  11. Serve veggies and chicken on a bed of quinoa, brown rice, or cauliflower rice with pan liquid as a sauce

Prep time does not include marinading chicken

Tested and delicious substitutions:

  • Low sodium soy sauce can be used in place of tamari (recipe will not be gluten-free)
  • Coconut aminos can be used in place of tamari if you want a soy-free and gluten-free option
  • Broccoli or cauliflower florets are a delicious and kid-friendly substitute for baby bok choy

    • Hi Elyssa – this is a great question. Any oil will work in roasting the veggies. Sesame oil can be used in place of toasted sesame oil, though I really like the flavor that the toasted sesame oil adds. If you do try the recipe with plain sesame oil (or another oil for that matter) please let me know how it turns out! Thanks for reading!

  11. I could easily tweak this a little and make it vegetarian. The spices would be delicious on a sheet pan of veggies. Original recipe for my kids. Veggie for me and the hubs. Yum!

    • Thanks Jill! Yes, a few simple changes could make this recipe vegetarian… I think the marinade would be delicious with tofu or even a more filling veg (sweet potato, perhaps). LMK if you try – I would love to know how you modify it!
