  • 1 pound medium shrimp (40-50 shrimp per pound) peeled, deveined
  • 1.5 cup whole wheat panko crumbs
  • 1.5 teaspoons garlic powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 3 tablespoons olive oil separated
  • 2 eggs
  1. Preheat oven to 400 degrees F

  2. Line baking sheet with aluminum foil and lightly coat with 1 tablespoon of olive oil
  3. Combine spices, panko crumbs and olive oil in a medium size shallow bowl
  4. Beat the eggs in a medium size shallow bowl
  5. Working with 6 to 8 shrimp at a time, dip them in the egg and then coat with the panko crumb mixture
  6. Place the breaded shrimp on prepared baking sheet
  7. Bake in oven for 8 to 10 minutes, until panko crumbs are golden brown and shrimp are cooked through
  8. Serve immediately with Pineapple Pepper Confetti Salsa
